There seems to be a specific problem with compatibility between OSs and Pi Zero 2 at the moment.
In general, the latest OS will still run on all Pi hardware -- although the older, slower 32-bit Pi will struggle with a Bookworm GUI. There are also some restrictions on 32-bit systems that cannot run 64-bit software.
Selecting the target hardware in Imager is just so you get the most appropriate recommendation -- which you are free to ignore if it suits you to use something else. AFAIK, the installation is not tailored for particular hardware at install time -- that is all done at run time. The downside is that the installation carries several versions of the firmware, where you may need only one.
