Ok, i've solved it.
The problem was that on the original SD card i was mounting an external USB stick on boot using an edit to the /etc/fstab file. This seems to have messed things up somewhat when i was booting up. The solution was to edit the cmdline.txt file on another machine. I used my Windows laptop, to add init=/bin/sh to the end of the line. That allowed me to edit the /etc/fstab file when i booted the Pi up again. I then removed the offending line in that file where i was mounting the USB drive.
