Whenever a video signal is passed through an AC coupling the absolute black and white levels at every subsequent point become undefined. If the picture is mostly white, blacks will be at a significantly lower absolute voltage than when the picture is mostly black. So the number you get from the ADC for any specific brightness will not be constant if there is no clamp. Also the range of voltages into the ADC would be significantly greater than the 0.7 or 1 volt peak to peak of the video.
