Generally speaking, I don't use SD cards larger than 32GB. If I really want more space than that, I switch to an external SSD (Pi4B or earlier) or a M.2 HAT and NVMe SSD (Pi5). The avoids the risks of pre-mature failure from lot of writes to high density flash and the risk of getting fake cards, as no one seems to bother doing that for smaller sizes (which appears to include 32GB now).
Back when things were starting out and Model B Pis were the current model, I used to be able to run a full system on a 4GB card. Over time that has crept upwards (software bloat affects Pis too!) and 16GB doesn't leave much space, so my current standard (if not an SSD) is a 32GB card.
