There are a number of failure points in a microprocessor based system. An unconnected wire is but one of them. Designing for safety is a huge topic.

Those sensors are available in NC options. If this is a safety function and a closed switch = safe then an open switch = danger or fault. If you get a danger indication you will investigate immediately, but if it turns out to be a fault it's no problem. If you physically protect your wiring and connections then you will reduce the likelihood of the danger indication being due to a fault.
