The ZFS is installed by following https://openzfs.github.io/openzfs-docs/ ... index.html. I am coming from FreebSD with a similar setup, and ZFS compiles and installing required kernel components right out of the box. On Debian Bookworm. I am absolutely no expert on ZFS, but I have been using ZFS on server on both OpenSolaris and last on FreeBSD. And it has served me well. And I have created several ZFS filesystem on the one mirrored zpool.
I don't understand your comment on the mirrored pool. I have saved myself once time earlier by replacing one defect drive, in a 100% mirrored setup by two drives, and zfs resilver. It saved my bacon at that time, and if one of the SSD drives fails I expect a replace of defect drive and resilver will do the magic. But, a striped setup might be better... Don't know..
Well, maybe SSD SATA is the best option? Or by a new Hat with two drives, and boot from ZFS root...
