So now I'll be using a simple TC4056/TP4056 charging module along with a 3.7v to 5v dc-dc booster. Does that seem fine?
It will probably work, but you won't be able to charge the battery at the same time as using the Pi as the TP4056 will charge at 1A 3.7V(ish) max. That's not enough to even run the Pi, let alone charge the battery at the same time.

A charged battery should be able to run the Pi for a while.
