Is that a PineberryPi HATDrive? If so your first port of call should be them. You should also follow their setup instructions not some random Youtube video.
Hey Guys

I am struggling with this problem since more than a month now.

I got the PI 5, bought a HatDrive and inserted a Lexar NM790 NVME SSD M2 (4GB).

I followed a video online, that said I should set hdparam=pciex_gen=3 (instead of leaving it at 2).

Two things:
  1. Where did that video tell you to put it?
  2. "hdparam=pciex_gen=3" is wrong and if in config.txt would therefore be ignored.
  3. The PCIe controller is not certified at gen3 speeds.
Then I changed the config to make it boot from the SSD.
Which config and to what?
That worked... and worked again... and... yes? no? not this time but maybe next.... worked... worked... didn't work anymore.

It can't boot from it, and the "lsblk" command does not recognize it anymore. What I already did:

- I ordered another HatDrive, as I thought my connector might have been damaged while it falling down (no hard landing). Same result, so that wasn't the issue and I now have a useless extra HatDrive.
- I ordered a USB NVME reader and checked on my computer, if the SSD is maybe damaged. No, it works without problems!

And did you try with the USB reader on the Pi?
- I tried to set hdparam=pciex_gen=2 again. The entry wasn't there anymore.

See above
- I reflushed my SD card and hoped it would recognize it then when I type "lsblk", no result still.
- The RPI5 runs fine off the SD card, no issues whatsoever!

The ONLY thing I have left, is buying another RPI5... But that would suck and it's not guaranteed to solve the problem. I don't need another Raspberry Pi.

Please, if you have any idea, I would be so thankful for any kind of help!

You should be able to reset the Pi5's EEPROM by using Raspberry Pi Imager to flash the recovery image to an SD card then booting from that.
