I would go with Bookworm/X11, since that would allow you to switch to a Pi 5, if it became useful. It also has a longer support horizon. So, a philosophical question is:
Which OS version would be better for non-networked, never updated, just works forever as a snapshot, OS:
last version of Bullseye or latest version of Bookworm/X11?
Gets you the advantages of the newer OS without having to deal with the teething issues of Wayland. So far I have not encountered anything that "requires" Wayland. Potentially by the next OS version release, Wayland may be sorted out and make more sense to use. Currently for my desktop use case X11 "just works" and Wayland/Wayfire does odd things and presents a learning curve (that offers limited return on investment).
