Sorry, I cannot help with screen rotation. I'll try to play with it and if I'll find any solution I'll let you know.

Try to increase the volume level using alsamixer. Also check if increasing the volume in UI helps with VU Meter amplitude.

The VU Meter screensaver doesn't work in a Web UI yet. Right now Web UI is actually a copy of the UI created on the backend side for a display. In case of the VU Meter it would be too much data (images) to transfer from a Pi to a Web Browser. It could bring your home network down and image would be delayed from a sound. That's why it just greys out the Web UI in case of the VU Meter and Spectrum screensaver.

There is way to use VU Meter in a Web Browser but it shows colors instead of Meters:

One color for the left channel is on the left side and another color is on the right side. Higher volume brighter colors. For this functionality I send to a Web Browser just two numbers for each channel. So, it should not be too high load on your network. I hope in the future to implement meters on a Web Browser side.
