It occurs that if you have the Pi5 you would be better off starting with a full installation of Bookworm and all the GUI tools/toys that come with it. You will still have the option of using your command line/ console interface either directly or on the desk top.
You may find that the GUI tool set includes helpful features to address your security worries and in far less cryptic ways than enforced by simple console access. The desk top interface gives you a browser which gives you the WWW from which you can cherry pick solutions to your many security issues and help build your knowledge.
The huge advantage with the Pi is that it is more or less disposable. Its cheap and if you stuff the operating system you can easily re-flash it. Perhaps go for set of spare SD cards ready to swap out if you screw up.
A thought on security: as long as you keep all personal data off the thing and never show it your credit card you should be relatively safe at least until you achieve some expertise. If anything you could be more of a threat to others.
Remember, if you cock it up its easy to just start over.
