What version of Raspberry Pi OS and what kernel are you running? I'm having a similar issue on a Raspberry Pi 5 using the July 4th 2024 x64 Pi OS release and kernel 6.6.31:

uname -aThe machine runs fine, then after 3-5 days I will find that I can't SSH in, but I can still ping the machine with no problem. The pi feels hot to the touch when I pull the power. I don't have a keyboard/monitor hooked up but will do that next to see if those symptoms line up.
Checking journalctl there are no unexpected messages, however logging simply ends a few hours before the issue is discovered.
